How to Make Ofe Nsala (White Soup)

Ingredients:

  • 1 large catfish
  • 1 onion
  • 1 tablespoon of chopped uziza leaves
  • 1 tablespoon of ground crayfish
  • 3 cloves of garlic
  • 2 cubes of seasoning
  • Salt to taste
  • 3 pieces of fresh pepper
  • 2 tablespoons of palm oil
  • 1 tablespoon of ground ogiri
  • Water

Instructions:

Step 1: Clean the Catfish To begin, you need to clean the catfish thoroughly. Remove the scales, cut off the head, and gut it. Wash the fish with salt and lime or lemon juice to eliminate any fishy smell.

Step 2: Season the Catfish Season the catfish with a tablespoon of chopped onions, a teaspoon of salt, and a cube of seasoning. Leave it to marinate for about 30 minutes.

Step 3: Boil the Catfish In a pot, add enough water to cover the catfish, then bring it to a boil. Add the seasoned catfish and let it cook for about 10 minutes. Once it’s done, remove the fish from the pot and set it aside.

Step 4: Blend the Onion, Pepper, and Garlic In a blender, blend one onion, three pieces of fresh pepper, and three cloves of garlic until it forms a smooth paste.

Step 5: Cook the Soup In the same pot you used to boil the catfish, add two tablespoons of palm oil and heat it up. Add the blended paste and stir for about 3 minutes. Then add a tablespoon of ground crayfish, a cube of seasoning, a tablespoon of ground ogiri, and some salt to taste.

Step 6: Add the Catfish and Uziza Leaves Pour enough water to cover the soup, add the boiled catfish, and let it cook for about 5 minutes. Lastly, add a tablespoon of chopped uziza leaves and stir. Leave it to cook for another 2 minutes.

Step 7: Serve Your Nigerian Ofe Nsala with catfish (white soup) is now ready to be served. You can enjoy it with any swallow of your choices like Eba, Pounded Yam, or Fufu.
