This is my ridiculously easy one pot catfish stew, it’s my go to when I want a quick sauce for boiled yam, okra or rice. If you enjoy cooking with catfish (check out catfish stew), then you will definitely enjoy this mouthwatering stew. For those in Nigeria, fresh catfish is best. If you live outside Nigeria use defrosted Catfish, Basa or Snapper.

Catfish Stew

Ingredients
- 2 large catfish – 500g (gutted and cleaned)
- 2 cups Nigerian Stew Base
- 2 Tablespoons Vegetable oil
- Cameroon or cracked black pepper – 1 teaspoon
- Salt – taste
- Maggi – 2 cubes
- Thyme – ½ teaspoon
- Freshly grated ginger – 1 teaspoon
Directions
- Cut fish into steaks and pat dry. Season with salt, and pepper. set aside
- Place a large pot on medium heat. Add in stew base, left over ingredients and 3 cups water. Cover and bring to a rolling boil
- Reduce heat to below medium and add in the fish. Simmer for 25 minutes or until fish is cooked through
